I've heard that leaving it as it is and using all 11 channels can actually cause interference rather than improving performance.

Actually, I believe that leaving it as it is might be the best option. Using all 11 channels in 2.4 GHz could give us the optimum performance result.

I don't think that's necessary. Reconfiguring the network to use static channel plans should be enough to prevent overlapping channels.
