B) and C) are definitely the way to go. I can't imagine trying to run a production vSAN on shared 1 GbE links. That's just asking for trouble.

I'm not sure why anyone would want to share 1 GbE network adapters for a vSAN cluster. That just sounds like a recipe for disaster.
